The beetrood risotto looks especially yummy. Think I might try that myself.

Thanks. Do you know if you have to boil the beetroot first before adding to a recipe. It doesnt say on the risotto recipe?

I have only eaten it plain cooked before.

I've just looked at some of the recipes and it generally says what to do with it first, i.e. boiling or grilling, but I'd be tempted to cook it in some water for about 10 minutes first.

The chocolate muffins sound good but I don't seem to be able to find it on the bbc site. Sounds like a recipe for DH as it has chocolate in it.

They were really nice - very moist and a lovely colour, and if you didn't know, you'd never guess they had beetroot in! My mum also used the same recipie to make a large cake as she didn't have any muffin cases.

Great - and even better that it's not you that's making them!! If your DH is anything like mine, it might be worth pointing out to him in advance that the recipie calls for "250g cooked beetroot", so the beetroots will need boiling for 1-2 hours (depending on size), and then peeling (skin should slide off once they're cooked) before they can be used.
