Delia does one with parsnips and apples - you add grated apple at the end if I recall correctly

I think curried parsnip soup is nice, or parsnips with other root veg and leeks

Roast Parsnip Soup
2 oz butter
1lb parsnips
1 onion
1 1/2 pints stock (chicken or veg)
salt and pepper
cream (if you like)

Roast the parsnips in 1 oz of butter in oven for 20 mins. (We use oil instead sometimes, up to you...)Melt rest of butter in a pan and cook onion for few mins until soft, but don't brown. Add the parsnips and stock and simmer for 15 mins. Season and liquidise. You can add cream now if you like and warm through. My DH makes this for Christmas Day - its lovely!

Sorry - not posted a recipe before and only just realised how patronising I sound...I'm sure most people actually know how to roast parsnips, but it is a Gary Rhodes recipe and I was just trying to edit his flippin long instructions!

I make this one, Parsnip & apple.
1oz marg
1 onion, fry onion, add
2 big parsnips (chopped)&
1 cooking apple (chopped)then add
1pint veg stock & 1/2 teaspoon mixwd herbs. Then add 1 pint milk. Simmer til cooked, approx 1/2 hr.
Blitz if you want.
