Proper meals for one. What do you cook?

I am fed up of cereal & toast & the occasional spag bol! I used to love cooking but am too worn out these days. I need some inspiration!

So, can anyone suggest some good 'proper' meals for one (or maybe two so I can freeze or eat as leftovers) that are relatively quick & easy to make?

Pasta with various sauces.

Stews/casseroles/soups/curries etc are all good to batch cook and freeze in single portions.

A nice piece of fish cooks really quickly and is nice with salad.

Jamie has a lovely, easy recipe in his new book. Off the top of my head ... one chicken fillet (skin on) - toss it in chopped fresh chilli & marjoram or oregano (I use dried), salt and pepper. Quarter and slice (thinly) butternut squash - only use 1/4. Put chicken breast and herbs etc into ovenproof dish. Put squash pieces around it. Pour some double cream over the squash but not the chicken and season with nutmeg. Drizzle some olive oil over the whole thing. Put into preheated 200 deg c oven for 25-35 mins. Mmmmmm.

another chicken recipe - mix some mayonaise and chopped/grated strong cheddar. Make slit in chicken breast and fill with mayo mix - wrap in bacon/parma ham if you want. Secure with a kebab skewer. Half an hour at 180C. Roast some leftover cooked potatoes with their skin on at the same time (just coat with olive oil). Yummy.
