does anyone have a fool proof recipe for bread pudding. i always used to make it with my mum when i was little but she did it all by how it looked rather then following a recipe and all the recipes that i've tried nothing is the same. Any ideas???

There's a bread pudding recipe in the November issue of 'you are what you eat' magazine - I haven't tried it yet, but it looks easy.

I have used this one that meggymoo posted. Its delicious and fool proof.

This recipe is the best!!

1 whole loaf (white only) min 21 oz
2.5 pints water
6 oz sugar
3 large heaped dsp mixed spice
16 oz mixed fruit
8 oz stork margarine
3 eggs

break bread into small pieces in a LARGE bowl add water and stir, leave for 15 minutes.

Add sugar spices and fruit and stir again, leave for another 10 minutes.

finally add stork margarine and mix in well, then add eggs and stir again, do not beat to a pulp as it is better with the rustic look.

Line a large meat/turkey tin with non-stick baking paper (tesco do a brilliant one). pour the contents into the tray.

cook on 150c for 95 minutes (fan assisted). serve hot, or leave in the tim for a few hours before turning out. you can sprinkle the top with brown sugar if desired.

My customers queue up for this on the days I make it for my shop.

cakeshoplady that looks and sounds yum, will give that a go, and it also sounds just like the one i used to make with my mum.

i use brioche and put apples under the bread. DEEELISHHHH
