Best recipe I got off MN was for a baked sweet potato topped with sweetcorn, spring onions and creme fraiche. A fave in our house now!

you will need

brocoli and cauli
1 tomato
1 tbsp milk
butter and grated cheese

(annabel karmel recipe and its yummy)

cook the brocoli and cauli till tender (i do mine in the steamer for 10 mins) chop the tomato in to tiny bits, after you have cooked the potato scoop out the inner part leaving the skins intact and mash with the milk, butter and grated cheese, once the veg is done chop into fine bits and mix with the tomato and add to the potato mix (blend together) and put back into skins then grate some more cheese on top and bake in over for 10 mins

The nicest, and easiest, I've ever eaten are just simple.
Grate some mature cheddar and chop spring onions. Scoop out cooked potato and mix with above, spoon back into skins and put back into oven until cheese melts. Really really lovely!

i'm a rubbsh cook and its one of the few things i can make that is actually edible (sp?) when cooked! i love them!

Hi shebnem, thanks for that. It is gorgeous isn't it. We alllove it here-I get demands for it from ds (3) all the time!

btw the jackets also work well with tuna, sweetcorn and mayo. Yum
