what can i do with it?
we really like korma type dishes, but i usually buy a jar of korma and make a big veggie stew.
does anyone have a good recipe that would be similarish and use the coriander?

nothing very stir fry-y
i've got sweet potato, butternut squash, parsnips...coconut milk, chickpeas, butter beans...
this is all sounding very soupy isn't it.
not in the mood for soup tonight.

Sweet potato and chick pea curry - fry onion and garlic, chuck in chunks of veg (could use the other veg you have too), add a teaspoon each of ground cumin, ground coriander and ground turmeric, stir for couple mins, add the tin of coconut milk. Bring to simmer. Simmer for about 20 mins till veg soft. Chuck in tinned chick peas and lots of chopped coriander. Bring back to simmer. Serve, sprinkled with lots more chopped coriander leaves and some rice
