hello, I've given up on the idea of making something special with red lentils. Any nice ideas with puy lentils, please? Thank you.

They make a great salad just boil them and then toss them in a garlic and balsamic vinaigrette and add roasted pepper, red onion, tomatoes whatever you want really. Feta cheese is good too as is asparagus.
You can also cook them in stock and serve hot too.

They are great used to substitute the meat in bolognaise(sp??) sauce too, and make a very tasty soup.

roast cod and puy lentils is lovely. with some roasted vine tomatoes alongside with balsamic vinegar.

I use them in veggie lasagne - added to tomato ragu then layered with sheets of lasagne, thinly sliced tomatoes & courgettes.

Also nice cooked with some brown rice in veg stock then add some balsamic vinegar, pine nuts & seed mix.

Jamie does a good salmon and puy lentil recipe. Always a winner here
Wrap salmon in palma ham and bake in oven for 10 mins
Meanwhile boil puy lentils in unsalted water until soft (20 mins ish will do), drain water, then add a good dousing of olive oil, spinach and chopped mint and season well. Eat with the salmon.
It really is very good.

effectively the same recipe as growlers but pop a clove of garlic and a bunch of sage into the unsalted water and take them out when you drain them. then serve with more chopped sage and stir in half a teaspoon of dried mustard powder and some butter.

We had a lovely meal tonight: sausages, mash and puy lentils. I used several ideas and came up for lentils with roasted shallots and garlic mixed with grated carrot and cooked lentils. Thank you everybody.

I use them in a kind of shepherds pie.

Cook as instructed (hm - those herb idea sound great below)

Sweat out a couple of chopped onions, clove of garlic, carrots if you like them, bit of stock (oxo if not veggie) add lentils, thicken with a bit of cornflour if needed or boil off the excess liquid.

Put in dish - top with mash and grated cheese, grill, eat. Yum!

Magic Puy: Good for lunch

Ingredients:
onion/shallots
bacon/pancetta
courgette
tomoatos
apricots (dried)
feta
herbs
puys

Rinse then boil lentils. Meanwhile gently fry shallots or onion finely chopped with some chopped up bacon or pancetta. Chop up some courgette, tomatos, feta, apricots, parsley, mint if you've got it. Add the cougette to the frying pan with the bacon and onion. When puys are cooked drain, add the other ingredients mix and serve warm. Drizzle some olive oil and balsamic to taste.
