So anyone got any good recipes for pumkin soup >
Have the inside of 3 huge pumpkins to bin tomorrow and it seems such a waste.Must be megga simple ! Had some pumpkin and parsnip soup at a restaurant yest and that was yummy, but wouldn`t know where to start

I made a lovely pumpkin stew the other day. Fried some red onion, carrot, parsnip, yellow pepper in olive oil, then diced the pumpkin (fairly large pieces) and added it with some courgette, a couple of tomatoes, mushrooms and a can of kidney beans, put a bit of stock made with Marmite over it (not too much - not quite covering the veg) and left to simmer for an hour or so. It was lovely. Pumpkin was the main veg in it because I used a whole one and only one each of the other veg.

I was going to post a link to delia smith page but you have to pay for her previously free online recipes now. Shame.
She does a great pumpkin soup. With gruyere or fontine cheese. I may have the recipe downstairs. Not sure. Will look.

Mooshy, make sure the pumpkins are the edible variety!

Not all pumpkins sold for Hallowe'en are.

(butternut squash is much nicer )

I peel and dice the pumpkin, add a chopped onion, a veggie stock cube and about 2 pints of water. Boil for abot 45 mins and blitz with the blender.
