need a tomato ketchup recipe!

Hi all, ds is Mr Fussypants with his food but loves dipping everything in ketchup. Woopee, something I can probably make myself with some nice vitamin filled tomatoes, and hide a few veggies in! Anyone got a good, simple recipe? I've googled it but all the recipes I found have 65 different herbs in and required boiling for 45 hours when the moon is full etc. Any good recipes out there? TIA

Well that is the principle of a ketchup - to preserve the flavour and nutrients in the tomatoes and give them a nice long shelf life, hence the prolonged boiling.

Why don't you roast some tomatoes, red onions, red peppers in some good olive oil. Season with sea salt and basil. Remove what skins you can, puree it with a drop of balsamic vinegar and a bit of brown sugar to balance the acidity and freeze in in ice cube trays and pop a couple out and either defrost at room temperature or microwave it as and when he needs it?

Actually you could add a slug of passata during pureeing just to add some more tomato body and some liquid.
