to name only one is impossible!! I like sooo many and they all serve different purposes!

We're cheese fans here... in fact we played 'desert island cheeses' recently and tried to work out which 5 we'd take to a desert island.

And the 5 would currently be...

a good strong cheddar (so versatile!)
roquefort (again versatile, brilliant in cooking)
parmesan
buffalo mozzarella
a nice tomme de savoie

that 5th one can change by the day though!

Wensleydale , Grommit, and Lancashire
Brie
That soft French cheese in a square box
That one covered in black wax and grape seeds

I don't like either blue or goat cheese.

Montgomerys Cheddar, Cornish Yarg, Mrs Applebys Cheshire, buffalo mozz, feta, parm regg.

Hate blue cheese. bleurururur.

Pié d'Angloys or a good gooey Brie.
And I must second Colston Bassett stilton. It really is delicious.
And the dairy is only 15 minutes from me.... Yum.

young Wensleydale - you need it almost squidgy, not crumbly like it usually is once it's reached the supermarkets, and wrapped in muslin, not plastic or wax. Best bought from as near to Hawes as possible.
