I fancy some with my bbq. I have spring onions mushroms peppers etc etc

was thinking any dressing ideas?

I chuck in a few chopped dried apricots, a gloop of olive oil and some balsamic vinegar. Yummy.

finely chopped spring onions, cucumber and tomato works well, added to dressed cous cous per frenchgirl's suggestion.

ahem, I am couscous queen. well, princess actually.

my standby -
to the dry couscous (assuming you are making for 4-6 people), add one tsp of cinnamon, 1/2 tsp of ground cumin, 1/2 tsp ground coriander. then cook your couscous in vegetable stock rather than plain boiling water. then add one tin of (drained)chickpeas. You can do this in advance and then just zap in the microwave when you need it, thus obviating need for heating chickpeas.

otherwise, make up a vinagrette, and to cooked couscous (again cooked in stock, tastes nicer), add chopped spring onions, cucumber and mint and then stir in as much vinagrette as you fancy - about half a cup to a cup.

both simply yummy....

am going for number 2 as have no chick peas and am on diet
so have no mnit either

will cook in stocka ndthen add hte rest?
