Moroccan Lamb Meatballs

Serves 4

4 tbsp oil
1 chopped onion
1 crushed garlic clove
1 tbsp ground cumin
1 tbsp ground coriander
1 tbsp ground paprika
450g/1lb minced lamb
400g chopped tomatoes
300ml/half pint vegetable
Lemon zest
Handful fresh coriander
Couscous

Heat 2 tbsp of oil in a pan and fry 1 chopped onion and 1 crushed garlic clove for 4 minutes. Stir in 1tsp each of ground cumin, ground coriander and paprika and cook for 1 minute. Cool. Mix half with 450g/1lb of minced lamb, season and shape into 24 balls. Heat 2 tbsp of oil in a pan and fry in batches until browned. Put aside. Add the rest of the onion mix to the pan with a 400g can of chopped tomatoes and 300ml/half a pint of vegetable stock, return meatballs and simmer for 30 minutes. Stir in a little grated lemon zest and some fresh coriander. Serve with couscous

sautee some chopped onnion, add chopped mushrooms, coook a few mins, add the mince, cook until no longer red; add potatoes, cover and cook untoil potatoes are done. You can also add whatever veg you want - courgette, carrrot etc. A lot of parsley in the end is nice too.

Try LamB Keema Curry:

Heat oil in pan, add 1 tsp cumin seeds, when they start to pop add chopped onion and soften, add 3/4 cloves crushed garlic.

Add mince, brown and break up with fork, add grated ginger, chopped green chilli, salt, tumeric, ground coriander and cumin. Continue to cook the mixture for 30 - 40 minutes, stirring frequently and adding hot water from the kettle if it sticks.

You can add some peas towards the end of the cooking time if you like. Add some garam masala 5/10 mins before the end of the cooking time, squeeze in some lemon juice and chopped fresh coriander and voila! Serve with rice, pitta bread or naan, or even normal bread. Yum!

lovely, thank you..I shall choose what to make a bit later..dp is not bakc for his break until 7.30

can't do burgers because he says he will get heartburn
