Anyone got any good pheasant recipes?

I have a brace of pheasants hanging up in my garage & don't really know what to do with them.I like it roasted,but find it can be a bit dry.Has anyone got any good recipes they can share?

Thanks,that looks good.They are young pheasants so might not be too dry.I'll try & find the apples & cream recipe too & leave it to dh to decide which one to do.
