I think you should be able to use them. Cut one open and see. I think that the change of colour is a natural thing (Of course should you find yourself at the local hospital thanks to my advice remember this one thing.......... Mars refuses to take responsibility for the actions of one Giraffeski)

I'm sure they'll be fine. It'll be because you didn't use artificial colouring.

mmmm - is it morroccan chicken? I have made that, chicken browned in ginger and white pepper...it's fabulous!

I always buy the preserved lemons from a middle easters or mediterranean eli, though.
