Easy lasagne - help

I have the meat sauce in the freezer. Please can you help me make this in to lasagne.

I also have fresh pasta sheets, double cream and mature cheddar...

I want to eat it on Thurs. Basic steps would be really appreciated!

Make a simple white (bechamel) sauce as follows....

  • melt 1oz butter in a saucepan
  • stir in 2 tablespoons plain flour so that you have a paste
  • cook the paste over a low hear for a few minutes
  • whisk in about 1/2 pint milk (and cream if you have it) gradually, allowing it to heat and thicken up. Should be thick enough to coat the spoon but not so thick as it doesn't pour.
  • Keep whisking and season well. Set aside.

Now heat the oven to about 170C and take a shallow lasagne or baking dish

  • Place a few tablespoons of meat sauce in the base and spread around
  • Spoon a little white sauce over the meat
  • Cover with a single layer of pasta sheets. No overlaps
  • Repeat the layers finishing with pasta.
  • Pour the rest of the white sauce over the top layer of pasta, spreading it out well so that it covers to the edges
  • Season with pepper, nutmeg and some grated parmesan
  • Bake for about 45 minutes until heated through, bubbling and the pasta is cooked

You can use creme fraiche as a layer instead of making a white sauce! Just layer meat sauce, pasta, creme fraiche then finish with grated cheese.

Another "cheat" white layer is cottage cheese and a couple of egg yolks. Yes, really. I don't like a sloppy white sauce. This lightens it but it is not runny IYKWIM. Sprinkle mozeralla over it aswell.

I make my white sauce in the microwave, it's really quick and easy. I think there is a Mumsnet video around somewhere, but I basically melt 2oz butter in the microwave until it's completely melted, add 2tbsp of plain flour and mix well. The slowly add half a pint of milk whilst whisking. Microwave for three minutes, stopping every minute to whisk until thick. Then just add cheese.
