Mini Quiche ideas

I am doing a tea party for a few elderly ladies tomorrow. I usually do lots of cakes, and will do so too. Though one of the ladies does not like cake, so I thought about doing some mini quiches. I have never made quiche before, it looks easy in the recipe. Any tips or ideas?

My best tip is to paint the inside of the pastry cases with beaten egg and then cooking until crisp. This creates a waterproof barrier for the egg/cream filling.

What cogito says is spot on. You'll avoid soggy cases.

I like onion, leek, bacon and mushroom. Egg, milk and cheese. Salt and pepper

Or
Onion, leek, courgette, egg, cream and cheese, salt and pepper

Do you cook the pastry before putting the filling in? The directions I read said cook all together.

Definitely cook before filling. Caramelised onion and goat's cheese. Pesto and cherry tomato. Asparagus and feta. Ooo so many tasty combinations!

Did not make any for my tea party, did not have time in the end. I will be making them for the family. Thanks for the advice. I get so bored making the same food all the time.
