Mexican starter and dessert?

Hi

We're having a couple of friends round next week for dinner. When we've been there we've had some lovely curries and I want to make a bit of a Mexican menu.

I'm going to make fajitas for the main as my DH loves them. But struggling with what to serve for starter and dessert?

I don't want anything too complicated and would prefer something I could make in advance and either cook/reheat later. We don't eat fish/seafood. It doesn't have to be fancy - just something tasty!!

Any ideas and recipes appreciated!!

Or Nigella's Roquamole with tortilla chips?

Chilli Chocolate Brownies for dessert? Probably not very Mexican, but hint of chill sort of works!

I remember having some kind of crème caramel at a Mexican restaurant once...

Nachos with homemade mango salsa and guacamole? You could even prepare the ingredients first and then make the guac in front of them, a la a good Mexican restaurant. I use a pestle and mortar.

Nachos / black bean soup / a Tex-Mex-esque layered salad /
Or my vote goes for a selection of salsas and dips (mango salsa, tomato salsa, guacamole, soured cream) with tortilla chips for dunking.

Pudding - chocolate cake and Margaritas!

When I did a Mexican party I did chilli boats for starter which were hollowed out potato skins with chilli in - all made before hand.
Dessert was chilli chocolate pots with Nigellas Mojito ice cream which is super lush and so easy!

I'm doing this for friends and their kids at the weekend. Feeding 10 with varying levels of fad!

So no starter as want children to eat main. Will do rice, wraps, plain chicken/beef, spicy veg, black bean chilli, sour cream, guacamole, salsa, salad and then let everyone self-assemble.
For pudding I have found a nice looking rice pudding (Curroz de Leche?) on the bbc good food website. That will do for the adults, and probably chocolate cake or vanilla icecream for the children.
Caramel seems big from the googling I have done!
