I need some ideas for puddings like crumble, in that they travel and re-heat well, they can be scaled-up easily and they are easy to make. Unfortunately, my mind has gone blank. Can anyone help?

I make this toffee apple pudding far more often than is good for me sometimes. It's always popular.
