Freezing veg for a casserole

So, I've just prepared veg to sling in the slow cooker tomorrow - onion, potatoes, swede, carrots, red pepper and mushrooms on this occasion. What I wondered was could I do a big batch of veg and freeze, so that I've got instant stew packs when I need them? Would all veg freeze ok? Thought it would save me some time! Tonight's veg will go in the fridge for tomorrow.

Yes I do this, the stuff is shredded in my processor and it packs well into small tubs.
