Best left over chicken recipes

I nearly always do a roast on a Sunday. Unlike many MNers my leftovers don't last me a whole week but once it's stripped I do always have enough for at least another decent family meal. At the moment I have a good risotto recipe for the leftovers and will often do a chicken salad with it or DH will use it for his sandwiches. Just wondering if anyone had any really tasty recipes they do with their leftover chicken.

this works well with leftovers, even though the recipe says raw - just doesn't need to be cooked as long.

We mostly do risotto, but sometimes I do a cheese and chicken lasagne or chicken stew with dumplings instead.

Pie
Chicken and leek, and bacon, and sweetcorn, and butternut squash, and potato, and chorizo, and , and anything else leftover in the fridge or cupboard.

Chicken Soup. I can't tell you the recipe, as DH does it, but he makes stock from the carcass,vegetables, leftover roast potatoes (or will add insides of a baked potato if no leftover roasts) (sometimes pulses/lentils) blitzes with hand blender, adds shredded chicken into the top. Something like that

I second chicken pie as well, I prefer shredded roasted chicken in pie to fillet meat.

I did a recipe I found on here with leftover chicken, and leftover rice. Everyone loved it. here

I made a chicken pie last week and it was delish! Ready made puff pastry, a tin of condensed mushroom soup, mushrooms and chopped chicken. So easy and really nice.

Just heat soup up, add the chopped mushrooms and chicken and summer for 5 mins. Jus rol pastry has grease proof paper on it so cut it to the shape you want and put in a pie tin ( with the paper still on. ) Put the chicken mixture in the pie dish, cover with rest of pastry. Use beaten egg to glue the pastry together and the rest to glaze the top. Prick some holes in and cook for about 25 mins gas mark 5.

I cook leeks and mushrooms in butter with flour, then add stock to make a white sauce and either make a pie or add cooked pasta which I then top with breadcrumbs and bake.

Last week I didn't have very much chicken and I had some crème fraiche, so I fried leeks and a bit of pancetta, added mustard and crème fraiche and a little of the pasta cooking water to make a more dressingy-consistency of pasta sauce, which I didn't bake or it wouldn't have been enough. That was nice too.

And curry. Do like a chicken curry.

I do a sort of sticky asian glaze - I have done it with chicken, and also with duck and goose.

Mix runny honey, soy sauce and chinese five spice to a sticky marinade (ie. not too much soy sauce), and stir the shredded chicken into it. Fry in a hot pan until dark and sticky, and serve with rice - it is gorgeous!
