Healthy dinner party ideas

I've got the girls coming to dinner, all are on diets/healthy eating. I'm after some ideas for all three courses that will super yummy but also good for the dieters. One of the girls is not keen on fish but other than that no fussy eaters.
Also anyone got any ideas what would be a good substitute for the usual wine and cocktails?

I would serve a simple vegetable soup as a starter... Roasted Red Pepper... maybe dollied up with some plain yoghurt swirled in at the end and a good sprinkle of chopped coriander. Serve with optional bread rolls

Main course I'd wheel out my super-healthy Spiced Chicken and Vegetable Kebabs. Roast and crush some Indian spices (cumin, fenugreek, chilli flakes), stir into plain yoghurt with a little lemon juice, salt and turmeric and use as a marinade for lean chunky cubed chicken. Thread this onto skewers alternated with red onion and green pepper squares before grilling. Serve with lashings of green salad and optional saffron rice

Dessert... has to be some kind of fruit. Baked apples with cinnamon served with optional crème fraiche or similar

Substitutes for wine.... Fancy cordials like elderflower or ginger made up with sparkling water and/or slimline tonic. Or have your own Tea Ceremony and wow them with fruit and herb teas.
