Right none of this taking part is fun I want to win!

Can anyone give me a recipe for a fab cake that looks impressive and tastes great! It will be served to the judges for afternoon tea on Friday.

Lemon Drizzle Cake. Works every time.

You can halve my recipe, or do a third less or just do the whole shebang!

12oz flour
9oz caster sugar
9oz butter/marg
4 eggs
3 tsps baking powder
6 tbsp milk
rind of 2 lemons

Mix together. Pour into large baking tray. Bake for about 30-35 mins at 180.
Warm the juice of the 2 lemons in microwave for about 20secs.

When cake cooked, prick with fork. Spoon over 3-4 tbsp lemon juice.

Mix the rest of the lemon juice with as much icing sugar as you want (dependent on the thickness of icing that you want).

Yum!!!!!!!!!!!!

I just use the roasting pan, the one I pop the joint in. By joint I would like to say that I mean meat joint!

I don't really do sizes, just find a pan, line it with re-usable baking paper (or foil) and just go for it.

fruit cake. 8oz self raisin flour, 4oz butter, 4oz sugar, 8oz mixed fruit 1 egg made up to 1/4 pint with milk and water, and 2 teaspoons of mixed spice. blend flour with butter, til u get a mix like breadbrumbs, then add fruit, sugar, mixed spice and the egg mixture and mix well, place in a lined 1lb baking tin and bake for approx 60 minutes on gas mark 4, i normally check that the cake is cooked properly by testing with a skewer first. This makes a lovely cake and doesnt last very long in my house as my kids really enjoy it. ps it can be made in advance always tastes better the following day.

Thanks I've plumped for the cinamon & nutella although am thinking of doing a lemon drizzle as well fingers crossed see how I do tomorrow
