there's this great simple recipe for slow cooked lamb - no herbs needed although a sprig of rosemary is nice - loads of onion - about 4 bulbs, sliced, a glass of wine and a third of a glass of white wine vinegar. Its amazingly simple and really delicious. You just brown the meat in a casserole dish, remove and add onions, put lamb back on top of onions and pour over liquid then cook in oven on low heat for at least 3 hours. Yummy.
