Please can you share your easiest/best canapé ideas?

Drinks for 30+ people, some will pop in some will be here for hours.
I know I need to feed them but beyond a honey glazed sausage and a cheesy biscuit I'm out of my depth.
I'm working long hours the day before but can find time to make and freeze in advance.
Save me from being judged by my new neighbours Blush

Puff pastry twists with Gentlemans Relish or wholegrain mustard in them
Make or buy Spanish omelette, allow to cool, then cut into cubes, spear with cocktail sticks
Blinis with salmon pate and a small blob of lumpfish caviare
Bread sticks with parma ham wrapped around them
Shot glasses of chilled soup

I saw some olive penguins recently that were so cute. Made from olives, a squirt of cream cheese and some carrot (feet and nose).

Please can you share your easiest/best canapé ideas?

Oh I love canapés.

I always make cold ones, I hate standing around the oven all night with a timer.

My latest faves are:

Homemade chicken liver pate with quince jelly on v good Puglian toasts
Homemade smoked mackerel pate with lambs lettuce on rye
Rare cold roast beef very thin slices, with a Stilton tarragon sauce on sourdough rounds
Feta ricotta dill cucumber bites
Mango chutney salsa on mini poppadoms
Sunblush tomato and goats cheese on posh crackers
Grilled chilli (can prep ahead) and mozzarella with basil on toasts
All the smoked salmon shizzle, with sour cream fish eggs dill lemon black pepper etc

I would say do as everyone has already suggested, fish board, meat board, salads etc, get some crusty bread and some pates. If you're feeling like you want to do a bit of prep you could do some fancy little bits to impress them at the start. I always do pear and prosciutto, mix ricotta and some blue cheese, put on a slice of pear and wrap in the prosciutto its honestly out of this world. This post is making me starving!

EastWickWitch last week DH cooked 24 quail eggs in a Pan at one, but he is a chef! If you nick each she'll so they are easy to open into the pan, you should be able to do a pack of 12 at once. Use plenty of vegetable oil mixed with butter (stops the pan from spitting), but not too much power on the gas/electric.

You could have a practice first so you get the hang of breaking the eggs into the pan. While we usually have these when we have guests, we had 2 boxes left from Christmas so DH cooked them for tea.
