Mediteeranean style. Make a rich tomato sauce with onions, garlic and some peppers in a wide, shallow pan with a lid. Sprinkle in some black olives and add the haddock fillets to poach through on top at the end. Serve with a few pasta shapes and a green salad.

Haddock caprice.

Dip haddock in flour, then beaten egg, then breadcrumbs. Shallow fry til crisp.
Meanwhile, slice a banana in half length ways. Wrap a streak y bacon rasher round each half and and grill til crispy. You need one bacon/banana combo per haddock fillet.
Mix some mango chutney with lemon or lime juice and warm in pan.
Serve with bacon banana on top of haddock fillet with mango chutney on top, alongside a selection of vegetables.

I know it sounds absolutely hideous. It was a dish at a hotel I worked at whilst a student and I always totally baffled/revulsed by it. One day it was staff lunch and I was starving so had to eat it. And it turned out to be lovely.

My quick fish recipe is to whizz a bread roll or piece of bread in my food processor, add a bit of olive oil, basil and grated parmesan, press it on top and bake it for 20 mins.
