Scones and muffins

I have people coming over on Sunday morning after church. If I make scone mix and muffin mix on sat night and just leave it in a bowl or fridge is it ok to bake the next day. I want them really fresh.

Best make them fresh on the day...muffin mix has to be cooked straight away. Scones only take about 15 mins to cook and no time to mix together so could you make them all before you go to church. That way everything will certainly be nice and fresh.
Mmmm...what kind of muffins are you making. I love blueberry.
Scones and muffins are really easy peasy...good luck. Smile

You could always weigh out the ingredients into separate containers (a la Delia) the night before, then just mix together next day. That'll save some time and mess!

Good ideas both of you , thanks for that. I'm making sweet scones and I have some rhubarb jam and I'm thinking blueberry muffins and also some banana ones with a cinnamon and brown sugar crunch . My Sil bringing croissants and bread. Be a carb factory .

This muffin recipe is nice and can be made in advance. Sure you could change the fruit in it if required.

I really would go with the assembling dry ingredients in advance then quickly whack oven on and add wet ingredients.

Scones and muffins which are frozen when very fresh actually freeze very well. You could put them in the oven for 5 when they've defrosted, just before serving. I used to get up at the crack of dawn to bake things fresh, but honestly freezing and defrosting is a very close second.

Thanks for that recipie couldhavebeen. I might try that with different fruit. I will get the ingredients ready for the scones and just mix it up in the morning. It's a Rachel Allen recipie also.
