The only herbs that spring to mind would be Basil (quite sweet & aromatic) or what about Lavender?

I am so thick. I thought you meant squash as in concentrated drink! I've heard of butternut squash but never acorn squash! I had a recipe for pumpkin soup that was very nice that included chucking in half a dozen cardamoms.
I still think Basil will be good, though.

lavender would be interesting. i put lavender in lots of things.

sprinkle brown sugar/maple syrup over the top for a caramelly taste

You do know you can make pumpkin pie using squash?

I'm still smiling at the thought of 'acorn squash' that well known drink for squirrels!

Yes - probably would've been a bit weird with lavender in risotto! But if you put dried lavender flowers in caster sugar and leave it till the smell & taste spreads through it makes a simply divine addition to sprinkle on mince pies.

I've had honey & lavender ice cream, too - sounds very strange but was manna from heaven!

I would say sage as well. Have used it before and very good.
