Yummy soup.

I'd like to make a vegetable soup in the slow cooker that I can either eat chunky or blend it as needed. Been looking for a recipe but all I have found have a tomato base, and I'm allergic to tomatoes Confused

Does anyone have a decent recipe, or can point me in the direction of one that doesn't use tomatoes?

I just made some.

Onions, leeks, carrots, swede, cabbage.
Oxo veg stock, black pepper and 2 bay leaves (that makes a difference).

I put half in the blender and left the rest chunky. It's really tasty Smile

Nigella's pea & pesto soup.

750 ml water
375 grams frozen peas
2 spring onions (trimmed but whole)
1 teaspoon maldon salt (or ½ teaspoon table salt)
½ teaspoon lime juice
4 tablespoons fresh pesto (she says fresh from tub but I say the jarred stuff is fine!)

Cook the peas in the water with the spring onions, salt & lime juice. When the peas are cooked, remove and discard the spring onions. Add the pesto and blitz.

courgette soup - bunch of courgettes, couple of onions, chop and fry in butter (it really must be butter doesn't taste as nice with oil), add chicken stock, blitz black pepper yummy.

have a look on pinterest too. recently found a recipe for carrot lentil and peanut soup. which i haven't made yet, but sounds yummmmmmmm.

Veg soup only takes about 10-15mins to cook, a slow cooker will ruin the flavours, imo.

I usually fry an onion in butter, add whatever veg I have in the fridge, add some marigold bouillon stock and then blend. Then I add a dollop of yoghurt/cream/sour cream/ bacon bits/ or some oil like olive/chilli/lemon/basil/Rosemary/truffle oils. Experiment a bit, it's a great way to use up veg.

I made an awesome soup the other day but it did involve pre-roasted veg.

Massive batch of pre - roasted carrot, red onion, butternut squash, all mixed with olive oil, garlic and thyme. Roast for one hour.

Place all veg in a pan, add big hand full red lentils, add chicken stock to cover, simmer till lentils are soft. Blend.

Was really yummy! Smile

Never done in slow cooker before but....
Butter nut squash, onion, garlic and other nearly manky veg sweated off in pan. Add chicken stock and a blob of curry paste. Whizz when done and add some unctuousness like cream cheese, yoghurt or cream

toffeeboffin this is how I always make veg soup too. The roasting really really adds to the flavours.

I've just made veg soup.

Pack of pre cut veg from Aldi, a stock cube and some lentils. Boiled thru and simmering just now. Will blitz it once it's cooled slightly.

But I second the pre-roasted veg. Great way of using up veg

Also I don't like the slow cooker for soup. Doesn't taste right.

Slow cooker soup was a disaster. Was tasteless.

Made toffeeboffins tonight and was yum! My DD even licked her bowl.
