What can I do with........

My SIL has an allotment and last night she gave me:

a small green pumpkin
a tesco bag full of spinach
1 large leek
and a large red cabbage.

I have some chicken breasts in the fridge and want to make my 10month old something I can freeze and defrost as I need it.

Any ideas?

I also have onions, carrots, a couple of potatoes and the usual store cupboard stuff.

pumpkin/leek/chicken all simmered in stock, with carrots/onion/garlic too. are you pureeing stuff for her? if so, that would puree nicely i reckon, or you could just cut everything into small chunks & make it as a casserole (if you do, put some flour in to thicken it).

Cook the spinach with cheese sauce. Boil red cabbage and apple together, apple will add a bit of sweetness.

Not sure if suitable for a 10mnth old, but Delia has a fab spinach dish.

Chop and fry an onion, then add 8oz of brown rice and fry for 2 mins, then add 16 fl oz of boiling water and cook till rice tender. Leave to cool.

Meanwhile, wash (and shred large leaves) spinach. Beat 2 eggs with a pinch of nutmeg and add 4oz of mature chees and mix with rice/onion.

Combine with spinach in a large greased dish. Make some breadcrums and add to a little melted butter and a large pinch of cayenne pepper.

Stick in oven for about 25mins on 180. Delish.

FINISHED

Made a casserole with onions, garlic, leek & carrot with chicken, pumpkin & potato

Then did a red cabbage and apple thing.

I've kept some of the caserole and some of the red cabbage stuff seperate and I've mixed some of the cabbage with the casserole.

Don't have the energy to do anything with the spinach today and DD2 is beginning to wake up for her nap so no more cooking for me today.

Went down ok. She's got a really bad cold at the moment and a hacking cough and is teething so poor little mite not as massively into her food as she usually is but still seemed to enjoy it. She's not really refused anything yet though!

Oh and DD1 actually ate about 5 mouthfuls which is pretty amazing for her. She likes to stick to my chicken nuggets, spag bol nd shepherds pies etc so to get her to eat a casserole thibg with pumpkin etc was good going
What she didn't eat I did and it was very nice.
