Any "hidden vegetable" recipes out there???

i'd like to know too. everytime i whizz veggies they taste like stewed cabbage

Sorry don't have the link but Jamie Oliver had a good recipie for hidden veggie pasta sauce.

You can always buy passata and add blended vegetables to that!

i stew sweet potato,brocolli,mushrooms, leeks and peas with a tin of chopped tomatoes until they're soft.
chuck in a load of oregano and blitz with a blender
i have that with pasta, or i add curry powder and chicken and have with rice

I was preparing some peppers which my kids said they didn't like. When they weren't looking I whizzed them up in the blender and served them with pasta. They had three helpings.....

Onions and garlic, celery, carrots, red pepper all fired together for about 5 minutes add, mushrooms and tomatoes. Cook for about twenty minutes. Add mixed herbs for pasta, and curry powder for curry! And blitz. Can add any meat to either sauce after blitzing. Have to do it for my ds ALL the time!

Made a lot of veggie organic pasta sauce and curry sauce today.
Any vegetables, I used: butternut squash, , mixed peppers, courgettes, mushrooms, aubergines. Roasted with olive oil salt and pepper.
Meanwhile, fry up onions and garlic , add organinc tinned tomatoes, herbs and seasoning.
When veg is ready, blitz up land add to onions mixture. Cook for about 10 minutes.
(Also added a bit of sugar to balance tomatoes).

Have made loads ...popped into freezer bags...brilliant.
(if children are used to jars of pasta sauce..just add a jar to this mixture at the end....to the whiole lmixture gives a little more of a falvour they are used to).

Guaranteed to love it!

I sometimes disguise green veg in green pesto as my son has got wiase to teh veg in tomato past sauce trick.

Have blended peppers, mushrooms, carrots and tomatoes to make a pizza sauce.

Then got kids to make their own pizzas and they loved them.

Have mixed finely grated carrot into baked beans.

Also mashed swede in with mashed potatoes.

I put mixed cooked butternut squash with a tomato sauce on pizza too. My son was eating it whislt putting it on the pizza before cooking. imust try that one again.

I do mediterranean veg:-

Small courgette chopped
1/2 onion chopped
2oz button mushrooms, chopped
Handful frozen sweetcorn
Couple frozen broccoli florets (or fresh)
1/2 tin chopped tomatoes
1/2 cup water

Fry courgette, onion & mushroom in a little olive oil til softened. Add tinned tomatoes, sweetcorn & broccoli. Add water. Bring to boil, then reduce heat and simmer for 15 mins until everything is soft.
THEN - blitz down in a blender/hand blender until you can't actually see any veg "shapes". It goes a very similar colour to bolognese sauce & tastes great.

This recipe is going to sound a bit weird, but stick with me and give it a go if you can as it's really delicious!

Ingredients: about 8 or 9 mushrooms; cleaned and grated, 1 med courgette, grated; couple of rashers of smoked bacon; tomato puree; cream or milk.
Fry courgette, bacon and mushrooms. Add a good squirt of tomato puree and pour over milk or cream and simmer for a bit. Makes a creamy sauce, you can't really see the veg and it tastes yummy. Serve it with shells as the bits get 'hidden' inside the shells!
