Ginger! Help please

Recipe calls for 2tsp ground ginger. I haven't any but I have crushed ginger in a jar.

How much should I use do you think???

Don't know exactly, but I would use substantially more than 2tsp, as ground ginger is very strong, but jar ginger is usually much weaker. I would also add a little pinch of finely ground black pepper. Yes, I know that that sounds crazy, but ground ginger has a much pepperier taste than any other form of 'wet' ginger.

It's for the Dinner Lady's gingerbread. DOn't want it to be too strong fro the DCs. Do you think 2-3tsp would be too little?

FWIW, Nigella's gingerbread recipe calls for 2tsp grated ginger.

If Nigella says 2tsp grated ginger for something similar, then I would have thoguht that 3tsp of jar ginger would be adequate. Personally I've never found a jar ginger that had the same intesity of flavour as fresh or for that matter powdered ginger, so I would err on the side of using more. But if it's for the LOs, then maybe miss out the black pepper, at least for your first attmpet.
