i do chicken, broccoli and pasta bake with cheese sauce and a sprinkling of pumpkin seeds on top

or a chicken and mayo sarnie on thick white bread with lettuce & tomato if don't want to do proper cooking..

make a white sauce,add mushrooms, white wine and chicken heat through, just before serving stir in some cream,yummy!!

Chicken supreme: 1 can condensed mushroom soup, small pot creme fraiche (sp?), 1 tbsp plain flour, 150 mls chicken stock OR white wine OR sherry.

Mix together in bowl, pour over chicken in ovenproof dish. sprinkle crushed cornflakes or crisps for crunchy top, dot with butter or marg and put in medium oven for 1 hour.

Serve with rice, and veg. v easy

Can do this with raw chicken, too but cook for 1 and a half hours.

chicken tagliatelle?

Chop onions and mushrooms finely. Soften in butter in pan. Add chopped cooked chicken. Add tablespoon plain flour. Heat through. Add chicken stock (3/4 pint water plus stock cube). Salt and pepper to tase (garlic is nice too).Add tinned sweetcorn (if liked) and add small carton soured cream just prior to serving on a bed on tagliatelle. Lovely....

just seen this thread but would have suggested home made chips (very indulgent just for one!) and lashings of good mayo with perhaps some pickled onions and beetroot. Would do it for me!
