Sweet potato wedges

Hi all, my children used to love sweet potato when they were tiny but now aren't so keen. I've tried making wedges by cutting the potato into quarters, adding oil and cooking in the oven on a baking tray, but they don't have a crispy outside which I think they would like. Does anyone have any tips? Thank you!

Longs link has surpassed any suggestion I had to offer - which was going to be a flour coating- but longs are far betterWink

Blush I was shown that recipe when I was in America, it's pretty good.

Thank you LDL. I'm definitely going to try this, and with ordinary potatoes too. I've also sent it to my daughter. Would never have thought of cornflour.
Btw, along the same lines, sprinkling semolina on your par boiled potatoes before putting them in the oven crisps them up beautifully.

Tried with ordinary potatoes last night and they were very nice and crispy, tho I used baking parchment as I had only got thin foil.
You'd need to have plenty of time to do them tho, which isn't always the case. Think I'll experiment and try soaking without using the cornflour and cornflour without soaking and see which bit is making the biggest difference!
