Rice inspiration please!

I'm hosting a NYE party on Wednesday. Planning a sit down meal comprising 2 casserole dishes (Spanish pork and beef in red wine) served with rice. I'm looking for inspiration for ways I can pimp up the rice a bit. Any ideas?

One of those nice wild rice mixes maybe?

That's a good idea - it would look a bit more interesting. I was thinking if chucking in some pistachios and cranberries for a bit of colour as well. Any more ideas?

Maybe some spinach or kale sauteed with pine nuts and/or raisins for colour?

I chuck spinach and lemon juice and rind in. You can use pine nuts too but I don't like them

I finely chop green pepper, red pepper, shallots and mushrooms then saute until very soft in butter and olive oil then add to cooked basmati rice. It is delicious!
