It's bloody lovely but I bought a joint way too big. It cost a fortune too. Smile

What's the best way to use up the leftovers? Feels wasted in a cottage pie

Some sort of Thai style salad would be delicious. Use a dressing made up of soy, fish sauce, sesame oil, lime juice and chilli. Could use loads of raw veg like carrots, peppers and cucumber and some crushed peanuts. Bulk it out with noodles if you need some carbs. Will be lovely and refreshing after all the heavy Christmas grub.

We are making chilli today and I'm going to fry off strips of roast beef and add it at the last minute.

I would probably use it cold or in any quick cook recipes like stir fry's or goulash to maintain the rareness.

We made beef and vegetable stir fry with noodles. It felt so light and spicy after the roast dinners!

Could you freeze it? I often freeze slices of beef in gravy to create a quick and easy roast dinner when time is short
