I got the mincer/sausage stuffing attachment for my Kenwood for Xmas and I wondered if anyone had any good recipes/pearls of wisdom for a virgin sausage stuffer? Wink

My dps used to make their own sausage as they're Hungarian. They used to go to the butchers to get the sausage skin (I think pig or cow guts) iirc. Then, used lots of herbs and spices, obviously paprika was involved, otherwise it wouldn't have been Hungarian. They did put rice in one type of sausage, but I can't quite remember as it was over 20 years since they made any.

I think I bought my mum a similar machine. She kisses me every time I'm visiting, and she's got it out. She used to use a manual mincer before, which obviously was very heavy, now that she's in her 70's.

Thanks Long my next door neighbour is Hungarian and her Auntie is a great cook, I'll have to ask if she has any sausage recipes. Grin

Dry 'Baby Rice' is a much better binding ingredient than breadcrumbs! Both my DC hated it as babies, so to use it up, I tried it for the sausages one day and never looked back... Smile

i made these as part of four different pork variations for Christmas eve. I enjoyed them, and the plates were all fairly clean so i think they went down well.

Amazon. I've not ventured into real casings. I go for the ease of use and storage of manufactured ones.
