Anyone else doing Veganuary? And year round vegans….family recipe ideas? Help and tips?

I am going to do Veganuary this year.

Have been meat-eating since 2007, but never quite at one with it, and eat vegetarian food 90% of the time. Spells of veganism in my 20s, but never since having kids. I'm keen to challenge myself to do this again, for health, animal welfare and environmental reasons, even just a month at a time, no life-long pledges as yet.

So, looking for preferably quick/easy/affordable family recipe suggestions. I've got the curry and chilli end of things covered….these are mainstays!

And love to know if anyone else is Veganuarying?

I've been vegan since October, finding it really easy actually, because of my reasons I guess. I made this last night, the stove top version. I replaced the cauliflower with butternut squash as that's what I had in. It was REALLY good :)

Oooooh that sounds lush. On the subject of slow cookers, I used to have one before we moved but everything that isn't stew or soup based seems to be meaty - anyone get great joy doing veggie food in them apart from the usual slop?

Easy chilli tonight for us. Roasted mushrooms and cannellini bean soup for me for lunch

The Vegan Slow Cooker by Kathy Hester is around £6 on kindle at the moment. Her hot and sour soup is excellent.

Hello chaps. My 8wks of ovo-vegetarianism has begun (I'm eating eggs from our friend's chickens). Family dinner of coconut rice with Thai peanut sauce was enjoyed by DH and I, DC will be served theirs for breakfast after claiming they weren't hungry. Sick of wasting food with those two little buggers
