Am usually ok with this stuff but not well and need some ideas.. Starters (pasta based) and main (fish based) sorted ... Can't bring myself to think about sweet stuff so lazily asking for ideas.. Something more exciting than fruit salad/poached pears... Meringue based out because one guest doesn't like meringue; tiramisu out; overly Rich and chocolaty out too...

Sticky toffee pudding? There is a Mary Berry recipe that is easy to make & yummy! Failing that, an apple tart with ice cream- always a winner!

Wow, thanks all. Am leaning towards something citrusy for this particular meal but loving the other ideas too, diet might have to wait a while...

Raspberry & white chocolate cheesecake. Just be careful melting the chocolate, make sure it doesn't burn.

Ingredients

150g digestive biscuits crushed, 75g Butter melted, 400g white chocolate broken into pieces, 65g Butter, 2 tsp vanilla extract,500g mascarpone,50g caster sugar,180ml whipping cream, 1 punnet frozen Raspberries

Method
Melt butter, add crushed biscuits and press onto base of 23cm springform tin.
Place chocolate, butter and vanilla extract into a bowl and microwave on medium power for 3 mins.
In food processor mix together the mascarpone, sugar and whipping cream to a smooth consistency.
Stir the chocolate into the cream mixture.
Gently stir in the punnet of raspberries.
Spoon the mixture on top of the biscuit base and place in the fridge to set overnight.
