sweet potato wedges???

Want to give ds some finger foods and these seem a good idea as it seems I can bake them without fat. BUT do they keep for a day or so in tupperware or should I make just enough for him to eat today?

I'd do them as you need them, they don't take as long as ordinary potatoes to cook, but they will go soft if you tupperware them. Unless you eat them all with a mayonnaise dip - yum!

You can maybe chop them up and store them before cooking? Maybe in water? Probably not for that long, though.

I have to say, I would probably coat them in a bit of olive oil before cooking (shake in a plastic bag with fat in it) - why do you want to avoid fat?
