I have a bag of dried black beans. Before I poison us all please coudl someone with experience of making chinese food tell me if there are any rules about boiling these for any length of time. They are black and thus (presumably) fermented but dried: not sticky at all. Thanks in advance

Do you mean this en.m.wikipedia.org/wiki/Douchi

You rinse it and then just use in stir fries. You don't boil to cook them. Unless it's some other black beans.
