Beef stew without potatoes

Hello all,

Im hosting a family day at home on 28th and wanting to do a great big beef stew to serve with jacket potatoes. So I don't want any pots in the stew. Will be in the oven or job also as slow cooker is too small.

Please help me with some recipes! Everything I'm finding online has potatoes in. I'm loath to just leave them out incase it's too salty/liquidy. Maybe I could substitue parsnips??

Littlemiss I am going to share my tried and tested beef'n'ale stew recipe with you
just for Christmas.

Get shin of beef. This is important.
a bottle of ale or guiness
Onions
Leeks
Carrots
Flat leaf parsley
Thyme
Flour
Bacon
Mushrooms

Cut up the beef into small pieces and roll them in the flour.
Fry an onion or two in the bottom of your stewpot.
Add the floured beef pieces and cook up a bit. Add some bacon if you like.
Pour over the bottle of beer
Add vegetables and herbs, turn down the heat, cover and leave for several hours.
If you like add the carrots later so they are not too soft when serving.
This really rewards long slow cooking, the shin of beef releases its stickiness and it all gets really tasty.
You can make dumplings at the end if you like and add them in.

oh i should have said that as well as the bottle of beer you will probably need the same again in water to cover it all...

I don't think I've ever cooked a beef casserole/stew with potatoes in it. Is it the norm?
The suggestion with beer will be lovely. Alternatively, red wine. No need to add salt and you can thicken the sauce by either flouring the beef before browning or adding flour to the casserole (mix well) before you add the liquid.

If you want something to put in the casserole that will soak up spare juice a handful or two of pearl barley is a nice addition.

I never put potatoes in mine, just chop up loads of veg, whatever is in season and chuck it in.

I have never put potatoes in mine Confused We prefer huge great stodgy dumplings. Or dumperlings as dd calls them.

I either serve mash, in a Yorkshire pudding or in a big crusty roll hollowed out. Sometimes I do suet dumplings
