Tomato Soup

Anyone got a good recipe for tomato soup DS loves it but at the mo he has it from a tin. Would really love to make my own. Also can you freeze homemade tomato soup?

My boys love tomato soup too.
I serve it mixed with chicken pieces sometimes put sweetcorn in aswell,and put over Mash/pasta/rice. They love eating these with chunky bread/pitta/wraps.
I find that boiling the chicken lightly before cooking in oven makes it less chewy (easier for young ones).

will look for recipe and get back to you. i think the toms have to be REALLY ripe otherwise you are better off using good quality tinned toms. There was one in this month's Good Food, I think. Have to wizz to piano but will get back!

I do a nice tomato and lentil one (even lentil haters seem to like it):

1 onion, finely chopped
1 stick celery, finely chopped
1 garlic clove, crushed
6oz red lentils, rinsed
1 x 400g tin tomatoes in juice
2 tablespoons tomato puree
1 tablespoon worcester sauce
1.5 pints veg stock (I use one stock cube)
half pint milk
Salt and pepper

Soften onion, celery and garlic for 5 mins in a little olive oil. Add remaining ingredients and stir well. Bring to boil, turn down and simmer for 45 mins, stirring occasionally to prevent lentils sticking to pan. Whizz in blender to smooth consistency. Freezes well. Makes enough for 5-6 people

can't find the Good Food one but here is an Anabel Karmel recipe(haven't tried it though!

1 onion chopped,
1 carrot grated,
25 g butter
4000g tin chopped toms
350 g skinned, seeded fresh toms
750 mls chicken or veg stock
1tsp sugar
salt and pepper

saute onion and carrot til soft add the toms and por all into a blender. Season and return to panadding stock and sugar. Simmer for 20 mins.

Have seen a nice roasted tomato one somewhere. Will try to track it down!

Thanks guys that's great i'll give it a go this weekend. Good idea about adding chicken pieces belle hadn't thought of doing anything like that before.

I do a yummy roast tomato one
Put 2kg tomatoes (whole), half a fennel bulb (sliced), a carrot (diced) in an oven proof dish, drizzle with olive oil, and bake for about 45 mn at 180C, then cover with foil and bake for another 20mn (check to make sure it's not cooking too fast). Season to taste and blend until smooth.
Delicious with fine mascarpone toast btw
