If you had the magic MN chicken...

And some peppers, chorizo and normal or arborio rice, how would you go about making a one pot Mexican style rice, veg and chicken dish?? I am clueless with rice unless it's in a microwave packet! Have a nice lot of leftover chicken, the pan stuff for stock if necessary and a well stocked spice store - ideas would be very welcome!!

I am awful with rice outside of risotto or a rice cooker. But is Mexican rice one pot sounds lovely. I have made a Spanish style paella with leftover chicken and chorizo, with saffron, paprika and stock. It's similar to making a risotto but less stirring Smile

Not quite one pot, but I do a lot of rice dishes with leftovers. I would cook plain rice as normal - maybe add a vegetable stock cube and while it is cooking, fry chopped onions and peppers in olive oil, then add the chopped chorizo to them.- About 2 minutes before end of the rice cooking, I would throw in whatever vegetables you want into the boiling rice- fresh broccoli or frozen peas/ sweetcorn etc - they will cook in with the rice. Have your chicken chopped to bite size. Drain rice, throw in fried onions etc and chopped chicken. Toss well together and season to taste.
Not sure if thats Mexican or not? :)

If I had your ingredients I'd chop an onion, soften it in a pan with some olive oil, chuck in chopped chorizo, leave it till the fat starts to run, chuck in some mushrooms and maybe some kidney beans, stir and leave while I measured the rice - 1mugful of basmati for 4. Chuck the rice and chopped chicken in and season, then chuck in twice as much chicken stock as the rice you used (2 mugfuls). Give everything a good stir and bring to the boil, then turn to the lowest you can and leave till all the water is absorbed. Done.

Thanks! Used your method, agoodbook, and added a cumin, chilli, paprika spice mix to the peppers. It was lovely and very quick and easy exactly what I wanted so will be going in my recipe folder from now on!

Its a big standby of mine. Glad it worked! I can use up cooked ham, chicken, pork. If I don't have any meat, I add chopped hard boiled eggs /prawns.
