Hi, just noticed on other thread you'd like that recipe so thought i'd type it out for you now - enjoy!600ml veg stock (i use chicken tho)
2 tblsp Thai green curry paste
25g creamed cocnut, crumbled
6 shallots halved
2 garlic cloves sliced thinly
450g b/nut squash
150g fine green beans
225g cherry tomatoes halved
3 tblsps fresh coriander chopped
Pour stock into large saucepan, add curry paste and creamed coconut
Boil sauce rapidly for 5 mins and then add shallots garlic, b/nut squash and green beans. Cook over medium heat until squash tender
Add tomatoes and cook further 5 mins. Sprinkle over coriander before serving
God, it's luuverly!! So low fat because you're not using coconut milk as you normally do in this type of cooking but you can't tell the difference.
