Butternut squash - convince me!!!

They look great, i'd love to cook one, but dont know how and suspect 8 yr old would not be impressed. dont want to spend hours cooking it for it to end up in the bin!

You can make rissotto with b/nut squash in it, or just roast in the oven like other root veg. I've got a gorgeous recipe for green thai b/nut squash curry (it's a weight watchers one so very low fat..)if you'd like it? not sure an 8 year old would like curry though..?

Don't chop it up at all - just shove it in teh oven whole, get it out an hour later and scoop out the flesh.

I then liquidise it iwth either apple, lemon and prawns, or with f=ginger and nutmeh=g to make soups

Being very dim - but do I need to peel it?

peel, chop it up in chunks, roast it with some rosemary scattered over, when done add creme fraiche and cooked pasta (twists are gd)to tin and mix up, yum yum. old good food recipe

can add some fried mushrooms, if non stick pan dont need to use any oil though

We're having roasted butternut and sausages tomorrow, really yummy and children love it. That's one from the Abel & Cole site.

chop it up, (boil if you want), roast it with a clove of garlic and bacon bits in a pan, add a bit of cream and pepper at the end, and dress pasta with it. it's one of my kids favourite

You don't have to peel it if you are going to roast it. It goes nice and crunchy.

Agree with lots of the posts:

roasting is delicious, with other root veg, toms, onion wedges.

If adventurous feeling, can mash it when roasted with garlic and sage and fill ravioli.
