This week I discovered puréed leek. Nice change from potato, as much lighter and a bit tangier, and seemingly delicious with all sorts.

Ooh I will try that and trying to get more interesting veg!

I had a great week last week as bought a Riverford recipe box and it was lovely cooking new things without any effort. So I now recommend rosti- I grated potatoes with a bit of carrot and onion in the Magimix, squeezed out the liquid, and then fried it in little cakes. Served over a bed of buttery kale with grilled bacon and a fried egg. Was amazing and I think the rosti had a sprinkle of garam masala in.

I forgot my other one which is more a time-saving tip.
For crumble topping I melt butter then stir everything else in which feels much easier than using a mixer and the result is we eat more puddings!!

Apparently mashed cauliflower is good too as a mashed pot substitute.

Chop curly kale toss with olive oil and salt and roast - amazing.

That Rosti meal sounds delicious Looseleaf.

If you melt the butter for crumble topping, does it still clump in he same way?

I love Kale. I am trying to eat more veg generally, and always forget how easy kale etc are

Ah I didn't think of the clumping- there might be a reason then no one else uses my method! As I don't know if it would be the same. I make mine with gluten free oats without flour due to annoying food intolerances !

Brussels sprouts, chopped in half, fried in butter quite slowly (about half an hour). Add flaked almonds towards the end. Or add tinned chestnuts instead if you are feeling christmassy.

Boursin under the skin of chicken thighs, then roasted. Yummy and fairly cheap. Boursin half price in Tesco last time I looked.

chard stir fried (stalks done longer) with chilli relish added towards the end. grilled courgettes, sliced thinly with provisional dried herbs and garlic. butternut squash - roasted with garlic and dried herbs or pureed and used instead of cream for a korma.

salsa verde
It goes with everything. fish pork chicken potatoes even use it as a salad dressing or mix with yoghurt.

Ingredients
1 clove garlic
2 cups roughly chopped fresh parsley
2 cups mint (or basil or coriander, roughly chopped)
1 teaspoon dijon mustard
1 tablespoon red wine vinegar
1 tablespoon capers
1 teaspoon kosher salt
? cup olive oil (extra virgin if you like)

whizz in blender and add chopped capers (or gherkins)
