Aubergine, Rocket & Spinach - help

I got aubergine, rocket & spinach in my veg box this week. My family are getting sick of spinach soup and I've never cooked with either of the other two before. Any easy ideas gratefully received.

Rocket best in a salad-maybe ith parmesan shavings and croutons.

Aubergines-gosh so many possibilities.
Cubed in a chilli tomato sauce for pasta,stuffed and baked,or just baked then insides scooped out,and mixed ith lemon,oil and garlic as a dip.

Moussaka too.

spinage grate in curry, our fave is chickpea, potato and spinage
aubergine great in a chilli i cube it then add it and then only use half the mince, also great with pasta, cube it and saute with garlic and onion for about 8 mins then add tin of toms and oregano simmer for half hour then add to pasta somthing chunky like rigatoni,brake up and chuck in a ball of mozzarella and a few dollops of creme frache serve with rocket salad

spanakopita - cook rocket and spinach together with lemon juice, some herbs (cardamom for posho-ness!), a bit of butter and maybe gently fried onions. Pile into filo pastry (buy the pastry), with lots of crumbled feta, wrap up and seal pastry, brush with butter and bake.

the aubergines I would chop and fry in olive oil with cumin, brown sugar and garlic. Or halve, cover in oil, bake until soft, scoop out and make bab ganoush by blending with garlic, lemon juice, tahini and yoghurt - use as a spread or baked potato filling.

also rocket is fab with crab and fresh chili pasta

these are all great - thank you.

i'm going to see if i can get filo pastry tomorrow and try the spanakopita

will try the aubergines after that
