WOuld like a yum recipe containing beetroot please

I thought they'd been one of these recently but can't find it under recipes.

Something tasty. Saw a nice one for goats cheese and beetroot but am pregnant so can't have that.

Just beetroot dressed in a yummy yoghurt dressing but really tasty and pg-friendly.

beetroot cake?

Try this - yum yum .

500g beetroot
squeeze lemon
1 tbsp olive oil
1 small bunch parsley
salt/pepper

TO SERVE
1 garlic clove, crushed to a paste with salt
200g home made greek yogurt (yeah right!!) thinned with 2 tbsps olive oil
1/2 tsp nigella seeds

cook the beetroot, cut into 1cm rounds, dress with lemon juice, olive oil, parsley, salt and pepper.
Mix garlic with yog and check for seasoning. pour over beetroot, drizzle with olive oil and sprinkle on the nigella seeds.

I don't recall having it with the nigella seeds!

beetroot cake is fabulous

its really sweet and moist

its kind of like carrot cake as in a weird ingredient

Twig - you a recipe then? Might give it a go although I was thinking more along the lines of savoury.

Boil beetroot.
Slice and dress with vinaigrette and frsh mint.
Crumble fetta over (fine when pg) and walnuts.

Great with grilled lamb.

thank you ladies - feta and beetroot sounds yum and to be honest I'll pretty much eat any type of cake

I'm with Koshka on the beetroot and choc cake. I made this into muffins and they went down a storm (ok mainly me as I troffed 'em pretty sharpish to stop DH eating them all).

You can have goats cheese as long as its pasturised
