20 hour bone broth-leaving it to simmer unattended?

Please help!
I've got a craving for good ramen & I really want to try & make my own bone broth. I've never done it before & all the recipes say to simmer for at least 20 hours. Now obviously I can't just stand by my hob all that time so I'm worried it won't be ok to leave it while I'm asleep or if I go out? I don't know what I think is going to happen but I just feel bit uneasy.

I make mine in the slow cooker, works a treat.
