Put a bit of oil in frying pan and get really hot.

Beat eggs with a whisk or fork (omelette size varies in our house e.g. DS has a 1-egg, I have a 2-egg and DH has a 3 or 4-egg. Can add a bit of milk and seasoning if req.

Add egg mix to pan and add filling immediately - ensure that whatever you're adding is cut small or sliced thinly as the omelette does not need much cooking. After a few minutes, fold omelette (we like the outside golden brown) and serve.

Repeat with next person's omelette.

Just before you put the eggs in, put butter in the pan. much tastier than oil alone.

my omlettes always look like scrambled eggs and scrambled eggs look like omlettes!

You can't do it without breaking eggs

My only sensible advice - Don't overcook it unless someone is pregnant or your eggs aren't that fresh. Nice if it's not too rubbery iyswim.
